Family Favourite Teff Pancakes
Makes: 8 | Prep: 5 mins | Cook: 10 mins
Ingredients
120g Wildnee white teff
2 teaspoons rapadura / coconut / caster sugar
½ teaspoon baking powder
1 cup buttermilk, or milk of choice
1 egg
1 pinch of sea salt
2 tablespoons butter
To serve:
4 tablespoons Greek or coconut yoghurt

Method
Place teff, sugar, baking powder and salt into a large bowl.
Make a well in the dry ingredients, add buttermilk and egg, whisking to ensure well combined.
Heat a frypan on a moderate heat and add 1 tablespoon of butter. Once melted add in 1-2 spoonful’s of batter per pancake to the pan. Cook for approximately 2 minutes, or until golden, before flipping and cooking for a further 2 minutes.
Repeat until all batter is used up.
Serve with a dollop of yoghurt and seasonal berries.
